Cookies were baked by Chowgirls Killer Catering Minneapolis under strict COVID protocols. There are nut products and other allergens on the premises. 

COLOMBIA: Espresso & Chocolate Chip Cookies

½ cup Butter, softened

½ cup Sugar

¼  cup Brown sugar

1 Egg

1tsp Vanilla

½ tsp Baking Soda

½ tsp Salt

1 tsp Cornstarch

1 cup All Purpose Flour

1tsp Espresso Powder

½ cup Chocolate covered Espresso beans, chopped

½ cup Chocolate Chips


In the bowl of an electric mixer cream together the butter and sugars until light and fluffy. Add the egg and vanilla continue beating. In another bowl combine baking soda, salt, cornstarch, flour, and espresso powder. Add dry ingredients to butter mixture and mix until just before combined. Add chopped espresso beans and chocolate chips to dough and continue mixing until just combined. Using a cookie scoop or spoon, portion dough into 2tbsp size balls and place on a lined baking sheet. Once dough is scooped chill dough for at least an hour before baking. Bake at 325 for 8-10 minutes or until the edges are set.  Yields: 24 cookies
