Cookies were baked by Chowgirls Killer Catering Minneapolis under strict COVID protocols. There are nut products and other allergens on the premises. 

FRANCE: Honey & Lavender Amaretti ​

2 cups Almond Meal

½ cup Sugar
1/8 tsp Salt

1 tsp Lavender, dried

2 ea Egg Whites

2 Tbsp Honey

1 cup Almonds, sliced

3 Tbsp Powdered Sugar


Combine almond meal, sugar, salt, lavender in bowl. Place egg whites in the bowl of an electric mixer and beat on medium speed. Heat the honey in a small sauce pan and just before it comes to a bowl increase the speed on the egg whites to high. Boil honey for 30 seconds, remove from heat. When the egg whites have formed soft peaks slowly pour the honey into the egg whites with the mixer on medium. Increase the speed to high and whip until the bowl is cool to the touch. Add the whipped egg whites to the almond mixer and mix until thoroughly combined. Chill for 1 hour. Once chilled divide dough into four equal portions and roll into a 12in log. Roll the log in sliced almonds and place on parchment lined baking sheet.  Chill for 2 hours or overnight. Preheat oven to 375. Remove logs from fridge and cut each log into 5 sections , roll each section in powdered sugar and place on parchment lined baking sheet. Bake for 10 min. Yields: 20 cookies
