Cookies were baked by Chowgirls Killer Catering Minneapolis under strict COVID protocols. There are nut products and other allergens on the premises.
INDIA: Coconut & Chai Biscotti
6 Tbsp Butter, softened
¾ cup Sugar
2 Eggs
2 cups All purpose Flour
1tsp Baking Powder
½ cup Shredded Coconut, toasted
1oz Candied ginger, chopped
1 Tbsp Chai spice
In a bowl cream together butter and sugar, once light and fluffy add the eggs one at a time scraping down the bowl after each. In another bowl combine flour, baking powder, coconut, ginger, and chai spice. Once the eggs are fully incorporated add the dry and mix until just combined. Split the dough in two equal sized portions. On a parchment lined baking sheet spread each portion of dough into 3inx10in rectangle. Bake at 325 degrees for 25 minutes. Once baked remove from oven and let cool for 5 minutes. Sliced each loaf of biscotti into 12 portions and lay on a baking sheet place them back in the oven for another 8 minutes or until crisp. Yields: 24 biscotti
